The Caciocavallo Festival is a food and wine event that takes place in Greci in August.
The event aims to promote one of the most representative products of Irpinia, the caciocavallo, a spun-paste mature cheese, the name of which seems to come from the special technique used in its production, whereby the cheeses are hung in pairs on wooden poles next to hearths.
The varied menu based on this prized product highlights a characteristic preparation procedure, namely that of the caciocavallo "impiccato" (hanged): the cheese is hung with strings for maturing and comes close, without ever touching them, the burning embers, which melt it and enhance its flavour. Spread on a slice of bread, it can be enjoyed with truffles, mushrooms, honey or mortadella.
The food and wine event is further enlivened by moments of conviviality, music and folkloric dances that help to warm up the rhythm of a summer evening so eagerly awaited by the entire local community.
